We’ve taken the ABC’s out of the classroom & into the kitchen (well, actually into your stomach if we’re being precise… 👀) with this rather delightful spin on a winter classic.
Packed full of colourful veg, chaos (that ingredient is if you choose to involve children) and tender chicken, this Alphabet Chicken Risoni Soup is the kind of dinner that doubles as an activity. Little chefs will love cutting out vegetable letters, stirring the pot, and spelling their names with bold veggie letters, while grown up chefs can consider writing sassy messages to their spouse in soup about taking out the bin or buying the chef flowers. 💅
On top of artistic food based communication forms, it's also a delicious, wholesome meal the whole family will enjoy.
Alphabet Chicken Risoni Soup

Ingredients
For the Soup:
- 400g Chicken Breast (skin off)
- 1 Tbsp Olive Oil
- 40g Chicken Stock paste (we love Urban Forager)
- 6 Cups Water
- 250g Risoni
- 2 Sweetcorn Cobs
- 4 Cloves Garlic
- 20g Ginger
- 1 Carrot
- 250g Celery
- 2 Shallots
- 15g Parsley
- 3g Thyme
For the Letter Veg:
- Letter cutters (or any other fun shaped cutters)
- Seasonal vegetables (we used a mix of: Carrot, Zucchini, Turnip, Sweet Potato, Potato, Parsnip & Beetroot)
Method
- Finely dice your shallots, garlic, ginger, celery, and carrot. Remove husks from your corn and shave off the kernels. Set the kernels aside.
- Separate the parsley leaves from their stems. Dice the stems and finely chop the leaves (set the leaves aside for serving).
- In a heavy-based pot, sear the chicken breast in a splash of oil until browned on the outside (no need to cook through yet).
- Add the shallots, carrot, celery, ginger, garlic, parsley stems, and thyme to the pot.
- Cook for a few minutes until the shallots start to turn translucent.
- Add your chicken stock paste and 6 cups of water. Bring to a gentle simmer and cook for 15 to 30 minutes, until the chicken is cooked through.
- While the soup simmers, thinly slice your chosen vegetables and use alphabet-shaped cutters to punch out letter shapes.
- Add the veggie letters to the soup during the final 10 minutes of simmering so they hold their shape but soften nicely.
- In a separate small pot, boil water and cook your risoni according to packet instructions (around 8-10 minutes). Drain and gently stir through the soup just before serving.
- Remove the chicken breasts, shred them with a fork, and return the shredded chicken to the pot along with the corn kernels. Simmer for a few more minutes until the corn is bright yellow and tender.
- Ladle the soup into bowls, top with a sprinkle of fresh parsley and serve hot. Get the kids to hunt for letters, spell their names, or just enjoy every spoonful.
