This Little Pig had an excess of eggs from its glorious bunch of girls, a.k.a the hens and so it decided today was the day to fling open the doors to the spring air and share with its dear piglets this glorious recipe for bacon & egg mini pie’s.

This recipe is great to take on picnics, heat up for a quick breakfast or serve at brunch with some strong coffee and some sweet strawberries for dessert. Also, this would have been great for a fathers day brunch – hindsight eh.
Warning: do not cook these alone, they are highly addictive and you don’t notice you are full and have overindulged until far too late :s. OINK!

Ingredients For Picnic Glory:
300g x Bacon
12 x Free Range Eggs
100ml x Whipping Cream
2 x Garlic Cloves
1 x Brown Onion
3 x Puff Pastry Sheets
1 x Lemon Thyme Bunch
40g x Shaved Parmesan
12 x Small Cubes Persian Fetta
12 Hole Muffin tray
Butter for greasing tray
Method of Picnic Glory:
- Preheat oven to 180 degrees
- Pop your pastry sheets out to thaw
- Crack your eggs (12) into a large bowl and whisk until combined. Stir in your cream (100g) and mix well.

- Skin and finely dice garlic (2 cloves) and onion (1).

- Slice your bacon (300g) into thick strips of around 3 cm thick.

- Pull the leaves off your thyme.
- In a large fry pan, heat your olive oil (1 Tbs) and then once hot to trot add in your strips of bacon.
- Cook until almost crispy and then add in your garlic and onion and cook until translucent.


- Grease the muffin tray with your butter.
- Cut your pastry sheets in quarters (i.e. 4 squares) and tuck your squares into the muffin holes, pushing them in and letting the edges stick upright.


- Now fill your pastry squares with your bacon, onion and garlic mix (allow it to cool a little first to make it easier on the trotters during assembly).

- Pop in your fetta cubes & parmesan sprinklings (40g) into each pastry square.
- Now pour your egg mixture (This Little Pig went a bit crazy and used a gravy boat for this bit) into your muffin squares until they are full to the brim of the muffin tray line.


- Top with your thyme leaves and give them all a good scrunch of pepper.
- Pop these beauties into the oven for 20-30 mins or until puffed up, golden and cooked through.
- Breakfast picnic is served! Oink!
