Life for This Little Pig is full of complex and luxurious food that after a while this porcine takes for granted and starts thinking that oysters and lamb chops are fridge staples and “leftovers night” is a quick homemade sun-dried tomato pesto with roasted cherry tomatoes and lashings of prosciutto. However, every now and then (like after Easter long weekend) this fine swine’s pantry does hit rock bottom and from desperation delicious things are born.
This little number is something that This Little Pig fancies you could get in China for breakfast. This could be definitely inaccurate as the closest to China This Little Pig has ever got is ordering garlic prawns twice in one week, however it just feels like something one would do. This is also of course fantastic for a quick dinner. Like it’s LITERALLY a 15 minute meal (I’m looking at you Jaimie Oliver for making piglets suspicious of this time allocation).
Anyway, roll up your midweek sleeves (whether that be for breakfast or dinner) and tuck into this super, super, super quick and easy meal piglets – you’ll be delighted, you’ll be surprised and most of all you’ll still have lots of time left and to top it off – most of these things could be found in your pantry and crisper..I think. Oink.
Chinese Noodle Breakfast Bowl
Prep Time: 3 Mins (not joking). Cooking Time: 10 min (also not joking - it's so quick!).
Ingredients for Noodle Bowl Amazement:
2-4 x Free Range Eggs (try Little Creek pastured Eggs –they’re amazing)
270g x Dried Soba Noodles (haven’t had a drink in weeks)
1 x Tbs Soy Sauce (start with half a tbs and check as this fine swine is a salty one)
1 x Tbs Stock Powder
1 x Tbs Sesame Oil
1 x Tbs Sugar
2 x Garlic Cloves
1 x Lime
1 x Chilli
1 x Bok Choy Bunch (bragging moment – bok choy pictured is from This Little Pigs garden. Snort).
Method for Noodle Amazement:
- Fill a large pot with 6 cups of water and pour in your soy sauce, sugar, stock powder (we use vegeta), sesame oil (1 Tbs) and crushed ginger (1 Tsp). Bring to the boil.
- Whilst you’re waiting for that to boil, skin and finely dice your two garlic cloves and drop them into the pot of water too.
- Once it comes to the boil, drop in your soba noodles (make sure they haven’t had an alcoholic beverage first – haha? Ok no more drinking noodle jokes) and set your timer for 3 mins.
- At the 3 minute mark, reduce the heat so it is just simmering along nicely and gently crack and break your eggs into the pot to poach them.
- Set the timer for 2 mins or until they look solid on the outside (don’t let them go too long or they’ll be boiled eggs).
- Roughly chop up your bok choy leaves and just before serving drop them into the pot and geeeeently stir them/poke them into the broth trying not to disturb your beautiful eggs.
- Now grab two big bowls. Ladle out your noodles and top with your eggs. Finish with a squeeze of lime, a big helping of spring onions and some slices of chilli.
- Now that is the quickest, easiest meal ever wouldn’t you say pigletto? Enjoy! Oink.
