Easter! An extremely long weekend that celebrates chocolate and religion all in one go. No matter where you sit on the spectrum how great is 4 days off in a row!? This Little Pig has made it’s go to guide for all things delicious on the blog so that you can sit back, relax and enjoy what could be the most delicious Easter ever.
Friday:
You’ve woken up less than fresh after “It’s the long weekend tomorrow so let’s have some celebratory drinks”. Best whip up these quick and easy Spanish baked eggs with smoked paprika, chorizo and parmesan. They can sit in the oven whilst you sit on the couch in a bleary daze wondering how people class you as an adult when you can’t even control your beverage intake.
You’ve pulled it together for a family lunch, it’s time to bring out the big guns – whole baked salmon stuffed with caper berries, tomatoes and red onion – this goes perfectly with a refreshing buttery chardonnay.
The families left but you’re all about tradition. Instead of battling the hordes at the fish and chip shop make these incredibly delish homemade fish and chips with a lemon pepper panko crumb and hand cut wedges.
Saturday:
Another day another delightful breakfast! Try out this quick and easy smashed avocado with fetta and chilli flakes or potentially a delightful baked avocado with sour cream and chives to get a little Mexican in your morning.
Moving onto a lunch this if often a great time to whip out a little barbecue number like these incredible soy and garlic charred chicken or perhaps a slow roasted pork shoulder – bonus points – you get pork banh mi rolls as leftovers.
Spend the afternoon wandering around the kitchen making lasagne for dinner or perhaps throw a lemon thyme chicken into the oven to have with a light salad.
Sunday:
It’s time to A. have an Easter egg hunt (why does this need to stop once you hit 11 years old????) and then B. feast like you haven’t eaten all weekend. Of course the odd hot cross bun will be dotted in there somewhere but This Little Pig thinks the key thing here is to eat some French toast with figs and strawberries or if you’re a savoury pig, zucchini fritters with smoked salmon.
Sunday lunch the families obviously turned up again (greedy swines that they are) so throw on a slow roasted lamb shoulder or perhaps a few lemongrass stuffed snappers.
You’ve kicked the family out (well done) and had a gentle snooze – it’s now onto Sunday night. You will of course need to whip up these incredible Japanese beef burgers or perhaps prawn and avocado salad if you’re looking to keep it light and simple.
Monday
You’re starting to get panicky now, the weekend is coming to a close and you haven’t done any of those life admin tasks that should have been done. Here is where This Little Pig recommends eating your feelings. Open up the emotions by enjoying a morning with some glorious oven baked granola or perhaps some soft boiled eggs with vegemite soldiers (nothing too over the top as your stomach is probably feeling assaulted by now). Have a gentle post breakfast snooze and then whip up a light lunch of the coconut poached chicken salad. Spend the afternoon sipping chardonnay and lying on a picnic blanket in the sun and then saunter inside and make up the pork meatball spaghetti. Nothing like calming that “the weekend’s almost over” feeling by descending into a carb induced coma. Bonus points – you’ll have lunch to take to work the next day.
