There are some things in life that should be easy and one of them is the Orrstraylian Barbecue. As the weather finally heats up this week (we hear everyone yell “yippee” immediately followed by “good lord it’s so hot”) This Little Pig thought it was high time it bought out it’s favourite go-to summer barbecue item.
This recipe is probably the easiest thing known to mankind ever, as long as you have a nice Asian sauce library available at your trotter, two fresh limes and some lovely free-range chicken thighs. It is entirely possible that this dish is so quick and easy that a small child could whip it up (parent’s please test this and report back – watch them when they turn on the BBQ though). So roll up your creased (as it’s been in the back of the wardrobe) summer shift and turn on the BBQ because this chicken is one to go down as a summer staple.
**NOTE: You could serve this with a lovely crunchy cos and goats cheese salad, some crusty bread and if you’re feeling adventurous some barbecued corn. Oink.
**ANOTHER NOTE: You can marinate the chicken overnight to make it extremely special and delicious if you are an organized swine.
Garlic & Soy Chicken
Feeds: 2 Hungry Piglets – When served with side salad.
Prep Time: 2 Mins (I kid you not piglet). Cooking Time: 6 Mins.
Ingredients of Barbecue Summer:
500g x Free Range Chicken Thighs
2 x Fresh Limes
Marinade of Barbecue Summer:
1 x Tbs Soy Sauce
1 x Tbs Teriyaki Sauce
1 x Tbs Rice Wine Vinegar
1 x Tbs Sesame Oil
1 x Tbs Sweet Chilli
1 x Tbs Crushed Garlic
1 x Tbs Crushed Ginger
Method.
- Turn on all the burners of your barbecue and put the lid down so the hot plate can get really nice and hot.
- Cut your limes into quarters ready for squeezing over the chicken at the end.
- Pop your chicken in a bowl with the soy, teriyaki, rice wine vinegar, sesame oil, sweet chili, crushed ginger and garlic (1 Tbs of each) and get your trotters in there and give it a good massage. Lots of piglets are a bit squeamish about using their hands to marinate their meat but This Little Pig thinks it’s really rather important as you learn to know exactly what a good fresh chicken breast should feel like, it connects you with your food and it also just marinates the meat really well so just get in there and give it a go piglet.
- Now ideally you would let the chicken marinate for up to 24hours in the fridge but if you are an unorganized swine like this piglet, then just trundle out to the barbecue and pop the chicken onto your super hot barbecue plate – beer in hand ideally.
- Allow around 3 mins on each side and then right at the end once the chicken is almost cooked, squeeze your lime halves all over the chicken to glaze him. You can cut the chicken in half to check if he's ready, you want him just cooked so he stays lovely and juicy.
- That’s it piglets. I know. Awkwardly easy.
- Now go for a quick dip in the pool and then jump out, light the mozzie coils and a candle, pour yourself a crisp glass of Riesling and tuck in dear piglets. Oink.
