If you’ve got a bowl of ripe pears and a block of chocolate, then congrats, you're halfway to dessert greatness. This 2-ingredient cake is rich, dense, fudgy, and—get this—completely flourless, eggless, and dairy-optional depending on your chocolate. It's a little bit magic and a lot delicious.
Perfect for when you want something impressive without the fuss, this cake gets its moisture and natural sweetness from gently cooked pears, then all that richness from dark (or milk, no judgment here) chocolate.
Ingredients
- 6 medium-sized pears
- 375g dark chocolate (or milk chocolate, if you're feeling mellow)
- 1 tbsp cocoa (for dusting)
- Fresh berries to serve (we love raspberries)
Method
- Core and chop your pears into chunks.
- Boil them in water for about 10 minutes until soft, or microwave with a splash of water in a bowl for 6 minutes, stirring halfway.
- Melt your chocolate gently in a heatproof bowl set over a saucepan with a couple inches of water. Keep it low and slow so it doesn’t seize.
- Once your pears are soft and chocolate is melted, blend them together using an immersion blender until smooth.

- Pop it in the fridge for at least 4 hours or until beautifully set.
- Dust with cocoa powder and pile on some fresh berries.
