This Little Pig loves pasta more than the average Joe. In fact if it were socially acceptable this carb loading swine would probably have it for every meal. So often when This Little Pig’s trotters are beyond tired, it turns to a quick and simple carbonara to take it’s woes away and replace those blues with a food coma of happiness like no other. Quick, easy and a little bit indulgent this carbonara will delight your senses and fill you with abundant happiness on a weary Monday night.
Mushroom, Leek & Thyme Carbonara.

Ingredients for Deliciousness.
300g x Fresh Pasta (Parpadelle is a nice choice).
200g x Mushrooms
2 x Leeks
2 x Tbs Olive Oil
2 x Tbs Worcestershire Sauce
6 x Tbs Thick Cream
1 x Tbs Chicken Stock
2 x Garlic Cloves
3 x Tarragon Sprigs
10 x Thyme Sprigs
½ x Parsley Bunch
Parmesan, Pepper and Salt to serve
How to Make Fabulousness:
- Heat a medium pot of water to the boil.
- Finely slice your mushrooms and garlic.
- Roughly chop your parsley and pull the thyme and tarragon leaves off their stalks.
- Take your leek and chop off his base then run your knife longways along the white part of the stalk, slicing 4 cuts into the leeks. Hold it all together and finely dice – it’s just an easy way to finely dice your leek really piglets. Discard the green top part.
- Drop your pasta into the boiling water and cook until al dente.
- Heat your olive oil (2 Tbs) in a large fry pan then add in your mushroom and Worcestershire Sauce (2 Tbs) and stir until mushrooms are starting to soften.
- Then drop in your leek and garlic and cook until leek is starting to soften.
- Scatter over your chicken stock and add 1 cup of the pasta water into your mushroom pan.
- Reduce to a simmer and wait until the liquid has halved then pour in your cream (6 Tbs).
- Add your drained pasta, tarragon, thyme and roughly chopped parsley to the pan and gently stir through.
Serve out your luscious pasta onto plates and top with a hefty scrunch of salt, pepper and a handful of parmesan.
Oooh it may be a a little naughty with the splash of cream but it's delicious so This Little Pig doesn't care! Oink!
