As this is a porcine circle of trust, we feel that we should be honest... Salted caramel popcorn may not be the most incredibly healthy thing, but neither is stuffing yourself to the point of passing out on Christmas day! (And we all do it don’t we piglets?) So take your guilt at making a naughty treat and pop that in the filing drawer to be reviewed after the new year in early January. You may as well make a fresh start all at once we think!
Anyway moving on from guilt, these crunchy, sweet yet slightly salty wonders make a fabulous Christmas gift. They don’t take long to make and they look glorious and can be stored in a dry, dark, cool place for up to 2 weeks. So prep yourself for a popcorn making “crafternoon” (great word use) and get that popcorn popping! Oink.
Salted Caramel Popcorn
Feeds: 4 Hungry Piglets (or 1 sugar crazed swine)
Prep Time: 5 Mins. Cooking Time: 15 Mins.
Ingredients for Caramel Glory:
4 x Pretty Airtight Jars to Store Popcorn in (or a few empty stomachs).
½ x Cup Popcorn Kernels
1 x Tbs Peanut Oil
2 x Tbs Honey
125g x Butter chopped into small squares
¾ x Cup Brown Sugar
¼ x Tsp Salt
How to Make Caramel Glory:
- In a large pot, heat your peanut oil (1 Tbs) until hot to trot. You can drop a corn kernel in and once tiny bubbles start appearing around it, it is time!
- Once hot to trot, pour in your corn kernels and give the pot a good shake to get all the kernels covered with oil. Now pop on the lid before the madness starts.
- Your kernels should now start popping away merrily (give them a few mins to warm up though before yelling “it’s not working!” and pulling off the lid) and all you need to do is give the pot an occasional shake and peer excitedly through the glass lid as it grows into fluffy pods of deliciousness.
- Once the popcorn stops making popping noises take it off the heat and remove the lid, peer in and ask "are you cooked popcorn?" The answer will be yes even if the popcorn refuses to answer you - don't be offended.
- Now pour your butter (125g), honey (2 Tbs) and brown sugar (¾ Cup) into a pot, place on a medium heat and stirring constantly, allow it all to melt together to form a lovely syrup.
- Bring to the boil and (keeping an eye on him) allow him to boil until he turns to a lovely golden colour and starts to thicken slightly (about 2 mins).
- Line a large baking tray with baking paper and then pour out your popcorn onto the tray.
- Drizzle your caramel over the top of your popcorn and mix well. Don’t let the caramel touch your hands though piglets as it is like molten larva and your trotter will surely burn and drop off into the popcorn.
- Once caramel is mixed well, dust the popcorn with your salt (¼ Tsp) and leave the popcorn to firm up.
- Once firm you can snap it all up and place in the lovely jars.
- Now here is where you get crafty piglets and you can stick all sorts of paraphernalia to it like sequins, feathers and so on and so forth.
- Or you can just shove it all in your mouth at once and tell no one that you ever made it. Merry Christmas Piglets. x Oink.
